This easy-to-prepare casserole is a week-night Mexican favorite in our house. With only 20 minutes to prep and another 30 to bake, dinner can be on the table in less than an hour!
1 medium onion, chopped
1 T vegetable oil
4 C cooked chicken, flaked (I used canned chicken)
1 can tomato sauce (14 oz.)
1 can diced tomatoes (14 oz.)
3 T (or one packet) taco seasoning
1/2 t garlic powder
12 corn tortillas
3 C shredded cheese - either Monterrey Jack or a Mexican blend
2 cans sliced black olives
1 can green chilies (optional)
Saute onion in vegetable oil. Add chicken, tomato sauce, diced tomatoes, taco seasoning and garlic powder. If desired, add a can of diced green chilies. Bring mixture to a boil; then lower heat and simmer for 15 minutes. In the meantime, layer four tortillas in the bottom of an 8" square glass pan. Spoon 1/3 chicken mixture over tortillas and sprinkle 1 cup cheese over chicken. Repeat two times ending with cheese. Sprinkle black olives over the top. Bake at 350 degrees for 30-40 minutes, until heated through.
