Pierogi Casserole

The leaves are falling and cooler temperatures are upon us. That can only mean that it's time to break out the old stand-by comfort food recipes. One of our all time favorites is Grandma Pavlik's pierogis, but they are a little involved for a quick Sunday meal, so we'll save them for a holiday post. A good, easy substitute is pierogi casserole - perfect for any Sunday and almost as good as Grandma Pavlik's but without all the fuss! This recipe makes a large casserole, plenty without doubling if you're bringing a dish to a party. You can easily cut the recipe in half and still have more than enough to serve at a family dinner.

12 oz. bowtie pasta, cooked
6-8 large potatoes, cooked and mashed
2-3 large onions
1 lb. Velveeta
3 sticks butter or margarine
  1. Fry onions in one stick butter, Add 1/3 lb. Velveeta
  2. Mash potatoes with one stick of butter and 1/3 lb. Velveeta
  3. Mix cooked macaroni with one stick butter and 1/3 lb. Velveeta
  4. Layer in large pan: noodles, mashed potatoes, and top with the onion mixture
  5. Bake at 350 for 1/2 hour
