Jalapeno Poppers

Jalapeno poppers don't have to come pre-breaded and from the freezer section of your grocery store. This easy recipe cuts the extra calories by foregoing the breading but it makes up for it with a zip not found in the store-bought variety. It's so simple to make a few or enough for a crowd, these are sure to become part of your standard football party fare. Makes 2 dozen appetizers.



12 fresh jalapeno peppers
1/4 cup soft cheese (Laughing Cow wedges or similar - pick a flavor you like. I like Light Queso Fresco & Chipotle or Garlic & Herb)
2 T light sour cream
3 slices bacon, cooked and crumbled (use turkey bacon for a lower fat appetizer)
  1. Wash jalapenos, cut off the stem end and slice in half longways. Carefully and thoroughly, remove the seeds and arrange the peppers on a cookie sheet, skin side down.
  2. Broil jalapenos, until outer skins start to blacken. Remove from oven.
  3. Meanwhile, in a bowl, mix cheese and sour cream and warm in a microwave until soft and easily blended.
  4. Fill each jalapeno half with cheese mixture and top with bacon crumbles.
  5. Return jalapeno poppers to 350 degree oven until cheese starts to melt (about 5-10 minutes).
  6. Enjoy!
