This recipe puts the "tender" in pork tenderloin. A simple recipe to assemble: put all the ingredients in your crock pot. Set it and forget it! The meat will literally fall apart. Serve on buns or tortillas with accompaniments for an easy, delicious meal any day of the week!
1 pork tenderloin, whole or cut in two pieces
2 C chicken broth
1 onion, coarse dice or slice
3 tsp salt
2 tsp pepper
2 tsp chili powder
2 tsp cilantro
2 tsp cumin
Combine all ingredients in crock pot. Set to low and allow to cook for 8 hours. Meat will be fork tender when ready. To serve, pull meat apart with fork and return to juice. Serve on tortillas with shredded cheese, salsa, sour cream or your favorite accompaniments. Black beans and Spanish or brown rice will complete this meal.
