I acquired this recipe many years ago as part of a Wisconsin Cheese promotion. An easy one-dish meal, it's a tried and true regular weeknight dinner entree in our household. Prep time = 15 minutes; Bake time = 30 minutes. Makes 5-6 servings.
1 lb. ground beef, browned and drained
1 1/2 C bottled salsa
15-oz. can black beans, drained
4 8-inch flour tortillas
2 C (8 oz.) Wisconsin Monterey Jack cheese*, shredded
*For authentic Mexican flavor, substitute 2 cups of Wisconsin Queso Bianco, shredded.
Heat oven to 400 degrees. Combine ground beef, salsa and beans. In lightly greased, 2-quart round casserole, layer one tortilla, 2/3 C meat mixture and 1/2 C cheese. Repeat layers three times. Bake 30 minutes or until heated through.
