Slow Cooker Mongolian Beef



This recipe popped up on Facebook and is authored by The Recipe Critic. We tried it and loved it, so it is now published to our recipe blog. The recipe literally took less than 15 minutes to assemble - including cutting and chopping. I tossed everything in the crock pot and set the rice cooker so dinner would be ready when the family rolled into the house. What a great weeknight treat! Serves 4-6.

Ingredients

1 1/2 lb. flank steak
1/4 C corn starch
2 T olive oil
1/2 t minced garlic
1/2 t ground cloves
3/4 C soy sauce (I use low sodium)
3/4 C water
3/4 C brown sugar
1 C grated carrots (I would use more - these disappeared!)
Green onions - for garnish

Instructions
  1. Cut flank steak into thin strips. In a ziplock bag, add flank steak pieces and cornstarch; shake to coat.
  2. Add olive oil, minced garlic, cloves, soy sauce, water, brown sugar and carrots to slow cooker. Stir ingredients. Add coated flank steak and stir again until coated in the sauce.
  3. Cook on high for 2-3 hours or on low for 4-5 hours until cooked through and tender.
  4. Serve over rice and garnish with green onions.
This meal is 11 WW points per serving (without the rice).
