This recipe was given to me by a friend whose grandfather passed it down to her. A hearty soup, this quickly replaced chili as a ski season favorite! Since it's made in a crock pot, it can be enjoyed any day of the week.
Ingredients:
2 lbs. Ground Turkey Breast, browned
2 cans rotel tomatoes
1 can pinto beans
1 can black beans
1 can corn (drained)
1 can hominy (drained)
1 can water
1 pkg. Taco seasoning
1 pkg. ranch mix
Shredded cheddar cheese (optional)
Sour cream (optional)
Tortilla chips
Add all of the ingredients (except the cheese, sour cream and tortilla chips) into crock pot and cook on low all day. Serve with shredded cheddar cheese, sour cream and tortilla chips.
