Carolina Cole Slaw

When we travel south, one of our favorite meals is Southern Pulled Pork with Carolina Cole Slaw on a sandwich. Southern slaws are made with a vinegar dressing and are classicly finely shredded medleys of cabbage, peppers and sweet onions. This recipe absolutely fits the bill and is a fabulous topping for a pulled pork sandwich or to be served on the side at a picnic. Enjoy!

1 large head of cabbage, trimmed, quartered and cored
1 medium green pepper, cleaned and sliced
1/2 red pepper, cleaned and sliced
1 medium sweet red onion, coarsely chopped

Add the above items into a food processor and "pulse" until a fine chop is achieved. Put ingredients into a bowl and add dressing:

1 C. sugar
1 tsp. salt
1 tsp. dry mustard
1 C. cider vinegar
2/3 C. vegetable oil


Mix sugar, salt, and mustard in a small saucepan. Add vinegar and oil bring to a boil until sugar dissolves. Pour over cabbage and toss well to mix. Cool.
